Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 box (6 oz) stuffing mix (such as Stove Top)
  • 1 can (10.5 oz) cream of chicken soup
  • ½ cup sour cream
  • ¾ cup low-sodium chicken broth
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • 2 cups frozen mixed vegetables (optional)
  • chopped parsley (for garnish, optional)

Instructions

  1. Spray the crockpot: Spray the inside of a crockpot with nonstick cooking spray.
  2. Season the chicken: Place the chicken breasts in the bottom of the crockpot and season with garlic powder and black pepper.
  3. Prepare the sauce: In a medium bowl, mix together the cream of chicken soup, sour cream, and chicken broth until smooth. Spread this mixture over the chicken.
  4. Add stuffing: Sprinkle the dry stuffing mix evenly on top of the chicken.
  5. Optional vegetables: If using frozen mixed vegetables, scatter them over the stuffing.
  6. Cook: Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is cooked through and tender.
  7. Finish: Fluff the stuffing before serving and garnish with chopped parsley if desired.
