- 4 boneless, skinless chicken breasts
- 1 box (6 oz) stuffing mix (such as Stove Top)
- 1 can (10.5 oz) cream of chicken soup
- ½ cup sour cream
- ¾ cup low-sodium chicken broth
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- 2 cups frozen mixed vegetables (optional)

Instructions
- Spray the crockpot: Spray the inside of a crockpot with nonstick cooking spray.
- Season the chicken: Place the chicken breasts in the bottom of the crockpot and season with garlic powder and black pepper.
- Prepare the sauce: In a medium bowl, mix together the cream of chicken soup, sour cream, and chicken broth until smooth. Spread this mixture over the chicken.
- Add stuffing: Sprinkle the dry stuffing mix evenly on top of the chicken.
- Optional vegetables: If using frozen mixed vegetables, scatter them over the stuffing.
- Cook: Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is cooked through and tender.
- Finish: Fluff the stuffing before serving and garnish with chopped parsley if desired.
