Beef Stew:
- 2 lbs beef stew meat (cut into 1-inch cubes)
- 4 cups beef broth
- 3 large carrots (sliced)
- 3 medium potatoes (diced)
- 2 celery stalks (sliced)
- 1 medium onion (chopped)
- 3 cloves garlic (minced)
- 2 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 bay leaves
- Salt and pepper to taste
- 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
- Fresh parsley for garnish (optional)
Instructions
- Prepare Ingredients: Place the beef, carrots, potatoes, celery, onion, and garlic into the crock pot.
- Mix Broth: In a small bowl, mix together beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, bay leaves, salt, and pepper. Pour over the meat and vegetables in the crock pot.
- Cook: Cover and cook on low for 8–9 hours or on high for 4–5 hours, until the beef is tender and the vegetables are cooked through.
- Thicken (Optional): If desired, stir in the cornstarch slurry during the last 30 minutes to thicken the stew.
- Serve: Remove bay leaves before serving. Garnish with fresh parsley if desired.
Notes
- For extra flavor, brown the beef in a skillet before adding it to the crock pot.
- Serve with crusty bread or over mashed potatoes.
- Leftovers taste even better the next day.
