This Crock Pot Beef Stew is a hearty and comforting meal that is perfect for cozy nights. Tender chunks of beef, along with vegetables and savory herbs, simmer together to create a delicious and satisfying dish.

Beef Stew:

  • 2 lbs beef stew meat (cut into 1-inch cubes)
  • 4 cups beef broth
  • 3 large carrots (sliced)
  • 3 medium potatoes (diced)
  • 2 celery stalks (sliced)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare Ingredients: Place the beef, carrots, potatoes, celery, onion, and garlic into the crock pot.
  2. Mix Broth: In a small bowl, mix together beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, bay leaves, salt, and pepper. Pour over the meat and vegetables in the crock pot.
  3. Cook: Cover and cook on low for 8–9 hours or on high for 4–5 hours, until the beef is tender and the vegetables are cooked through.
  4. Thicken (Optional): If desired, stir in the cornstarch slurry during the last 30 minutes to thicken the stew.
  5. Serve: Remove bay leaves before serving. Garnish with fresh parsley if desired.

  • For extra flavor, brown the beef in a skillet before adding it to the crock pot.
  • Serve with crusty bread or over mashed potatoes.
