Instructions
- Boil Potatoes: Boil the cubed potatoes in salted water for about 10–15 minutes or until tender. Then drain and return them to the pot.
- Mash Potatoes: Add the butter, whole milk, salt, and black pepper to the drained potatoes. Mash until smooth and creamy. Let the mashed potatoes cool to room temperature before proceeding.
- Prepare Chicken Filling: In a bowl, combine the shredded cooked chicken, softened cream cheese, grated Parmesan, and chopped fresh parsley. Mix well until the mixture is smooth and creamy. Season with salt and pepper to taste.
- Shape Croquettes: Once the mashed potatoes have cooled, take about 1 tablespoon of the potato mixture and flatten it in your palm. Place a teaspoon of the chicken filling in the center, then mold the potato mixture around the filling to form a ball or oval shape. Repeat this with the remaining potato and filling mixtures.
- Coat Croquettes: Dip each croquette into the beaten egg, ensuring it is fully coated. Then roll it in breadcrumbs (preferably panko), covering it evenly for a crispy finish.
- Fry Croquettes: Heat vegetable oil in a deep skillet or pot over medium-high heat until it reaches 350°F (175°C). Carefully fry the croquettes in batches for 3–4 minutes or until they turn golden brown and crispy on all sides. Remove them using a slotted spoon and drain on a paper towel-lined plate to remove excess oil.
