Ingredients
Scale
Onion Rings
- 2 large yellow onions, cut into 1/2-inch thick rings
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tsp baking powder
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cold sparkling water or club soda
- Vegetable oil for frying
Spicy Mayo
- 1/2 cup mayonnaise
- 1–2 tbsp Sriracha or other hot sauce
- 1 tsp lime juice
- Pinch of salt
Instructions
- Prepare the batter: In a large mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, garlic powder, paprika, salt, and black pepper until evenly combined. Gradually add the cold sparkling water while whisking to create a smooth, light batter without lumps.
- Heat the oil: Pour vegetable oil into a deep skillet or pot, heating it to 350°F (175°C) to reach the ideal temperature for deep-frying the onion rings.
- Batter the onion rings: Separate the onion slices into individual rings, then dip each ring into the batter, allowing excess batter to drip off to avoid clumps.
- Fry the onion rings: Carefully place the battered rings in the hot oil in batches to prevent overcrowding. Fry each batch for about 2–3 minutes per side until the onion rings turn golden brown and achieve a crispy texture. Use a slotted spoon to transfer them to a paper towel-lined plate for draining excess oil.
- Make the spicy mayo: In a small bowl, whisk together mayonnaise, Sriracha (start with 1 tbsp and adjust to taste), lime juice, and a pinch of salt until the sauce is smooth and well combined.
- Serve: Drizzle the spicy mayo over the hot onion rings or serve it on the side as a dipping sauce to enjoy immediately while the rings are crispy.
Notes
- For extra crispiness, double-dip the onion rings by dredging them in dry flour before dipping into the batter.
- Use chilled sparkling water to make the batter light and airy, enhancing the crunch.
- Adjust the amount of Sriracha to control the heat level of the spicy mayo according to your preference.
- Drain onion rings on paper towels to reduce excess oil and keep them crispy longer.
