Description

Deliciously crispy chickpea and sweet potato fritters packed with Mediterranean-inspired flavors. These vegetarian fritters are easy to make, perfect as an appetizer or main course, and can be served with your favorite dip for a satisfying meal or snack.

Fritter Mixture

  • 1 medium sweet potato (about 1 cup grated)
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh parsley or cilantro
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour (or chickpea flour)
  • 1 egg (or flax egg for vegan)

Cooking

  • 23 tablespoons olive oil for pan-frying

Instructions

  1. Prepare the sweet potato: Grate the sweet potato using a box grater or food processor. Place the grated sweet potato in a clean kitchen towel and squeeze out as much moisture as possible to prevent soggy fritters.
  2. Mash the chickpeas: In a large bowl, mash the drained chickpeas with a fork or potato masher, leaving some texture for bite.
  3. Mix the ingredients: Add the grated sweet potato, chopped green onions, parsley or cilantro, minced garlic, ground cumin, smoked paprika, salt, and black pepper to the mashed chickpeas. Stir well to combine.
  4. Add binder: Stir in the flour and egg (or flax egg) to the mixture until it holds together. If the mixture is too wet, add a little more flour gradually until it reaches the right consistency.
  5. Heat the oil: Heat olive oil in a large skillet over medium heat to prepare for frying.
  6. Form and cook fritters: Scoop about 1/4 cup of the mixture and flatten into a patty. Cook 3–4 fritters at a time in the hot skillet for 3–4 minutes on each side, or until golden brown and crispy.
  7. Drain and serve: Transfer cooked fritters to a plate lined with paper towels to absorb excess oil. Repeat with remaining mixture until all fritters are cooked.
