Description
Deliciously crispy chickpea and sweet potato fritters packed with Mediterranean-inspired flavors. These vegetarian fritters are easy to make, perfect as an appetizer or main course, and can be served with your favorite dip for a satisfying meal or snack.

Fritter Mixture
- 1 medium sweet potato (about 1 cup grated)
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh parsley or cilantro
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup all-purpose flour (or chickpea flour)
- 1 egg (or flax egg for vegan)
Cooking
- 2–3 tablespoons olive oil for pan-frying
Instructions
- Prepare the sweet potato: Grate the sweet potato using a box grater or food processor. Place the grated sweet potato in a clean kitchen towel and squeeze out as much moisture as possible to prevent soggy fritters.
- Mash the chickpeas: In a large bowl, mash the drained chickpeas with a fork or potato masher, leaving some texture for bite.
- Mix the ingredients: Add the grated sweet potato, chopped green onions, parsley or cilantro, minced garlic, ground cumin, smoked paprika, salt, and black pepper to the mashed chickpeas. Stir well to combine.
- Add binder: Stir in the flour and egg (or flax egg) to the mixture until it holds together. If the mixture is too wet, add a little more flour gradually until it reaches the right consistency.
- Heat the oil: Heat olive oil in a large skillet over medium heat to prepare for frying.
- Form and cook fritters: Scoop about 1/4 cup of the mixture and flatten into a patty. Cook 3–4 fritters at a time in the hot skillet for 3–4 minutes on each side, or until golden brown and crispy.
- Drain and serve: Transfer cooked fritters to a plate lined with paper towels to absorb excess oil. Repeat with remaining mixture until all fritters are cooked.
Notes
- Serve these fritters with yogurt, sour cream, tahini sauce, or your favorite dip for added flavor.
- These fritters are freezer-friendly and can be reheated in a skillet or air fryer for convenience.
