For the Chicken Rolls:

- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon garlic powder
- 4 slices mozzarella cheese
- ½ cup marinara sauce
- ¼ cup grated Parmesan cheese
- 1 cup Italian-style breadcrumbs
- ½ cup all-purpose flour
- 2 eggs (beaten)
For Garnish:
- 2 tablespoons olive oil
- Chopped fresh basil or parsley for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper or grease it lightly.
- Season chicken: Season chicken cutlets with salt, pepper, and garlic powder.
- Assemble: Place mozzarella cheese and marinara sauce on each chicken piece, then roll tightly and secure with toothpicks if needed.
- Dredge and coat: Coat each roll in flour, dip in beaten egg, then coat thoroughly with breadcrumbs.
- Sear: Heat olive oil in a skillet and sear chicken rolls until golden brown.
- Bake: Transfer rolls to the baking sheet, top with marinara and Parmesan cheese, then bake for 20–25 minutes until cooked through.
- Serve: Garnish with basil or parsley, remove toothpicks, and serve hot.
