Description

This Creamy White Chicken Lasagna Soup combines all the flavors of a classic lasagna in a comforting, easy-to-make soup. Tender shredded chicken, broken lasagna noodles, and a blend of creamy cheeses simmer together in a rich broth to create a hearty meal perfect for any occasion.

Ingredients

Scale

Soup Base

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) chicken broth
  • 1 cup heavy cream

Protein

  • 1 pound chicken breast, cooked and shredded

Pasta and Cheeses

  • 8 lasagna noodles, broken into pieces
  • 1/2 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Seasoning

  • Salt and pepper, to taste

Instructions

  1. Sauté aromatics: Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, cooking for 2-3 minutes until they soften and release their fragrance.
  2. Simmer noodles and chicken: Pour in the chicken broth and bring it to a simmer. Stir in the shredded cooked chicken along with the broken lasagna noodles. Cook for 10-12 minutes, stirring occasionally, until the noodles are tender but not mushy.
  3. Add cheeses and cream: Lower the heat and stir in the heavy cream, ricotta cheese, shredded mozzarella, and grated Parmesan. Cook for another 3-4 minutes, allowing the cheeses to melt fully and the soup to become creamy and cohesive.
  4. Season to taste: Finish by seasoning the soup with salt and freshly ground black pepper according to your preference. Stir well and serve hot.

Notes

  • Use rotisserie chicken or pre-cooked chicken breasts for convenience and to save cooking time.
  • Break lasagna noodles into bite-sized pieces to make them easier to eat in soup form.
  • For a lower-fat version, substitute half-and-half for heavy cream and use part-skim mozzarella.
  • This soup reheats well and can be stored in the refrigerator for up to 3 days.
  • Garnish with fresh basil or parsley for added flavor and color, if desired.
