Ingredients
Scale
Soup Base
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (14 oz) chicken broth
- 1 cup heavy cream
Protein
- 1 pound chicken breast, cooked and shredded
Pasta and Cheeses
- 8 lasagna noodles, broken into pieces
- 1/2 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Seasoning
- Salt and pepper, to taste
Instructions
- Sauté aromatics: Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, cooking for 2-3 minutes until they soften and release their fragrance.
- Simmer noodles and chicken: Pour in the chicken broth and bring it to a simmer. Stir in the shredded cooked chicken along with the broken lasagna noodles. Cook for 10-12 minutes, stirring occasionally, until the noodles are tender but not mushy.
- Add cheeses and cream: Lower the heat and stir in the heavy cream, ricotta cheese, shredded mozzarella, and grated Parmesan. Cook for another 3-4 minutes, allowing the cheeses to melt fully and the soup to become creamy and cohesive.
- Season to taste: Finish by seasoning the soup with salt and freshly ground black pepper according to your preference. Stir well and serve hot.
Notes
- Use rotisserie chicken or pre-cooked chicken breasts for convenience and to save cooking time.
- Break lasagna noodles into bite-sized pieces to make them easier to eat in soup form.
- For a lower-fat version, substitute half-and-half for heavy cream and use part-skim mozzarella.
- This soup reheats well and can be stored in the refrigerator for up to 3 days.
- Garnish with fresh basil or parsley for added flavor and color, if desired.
