- 6 cups chicken broth

- 8 oz uncooked lasagna noodles, broken into pieces
- 2 cups cooked shredded chicken
- 1 cup half-and-half or heavy cream
- 1/2 cup grated Parmesan cheese
- 1 1/2 cups shredded mozzarella cheese
- 1 cup fresh spinach (optional)
- Salt and black pepper to taste
Instructions
- Sauté Aromatics: In a large pot or Dutch oven, heat olive oil over medium heat. Add chopped onion and cook for 4–5 minutes until soft and translucent, stirring occasionally.
- Add Garlic and Seasonings: Stir in minced garlic, Italian seasoning, and red pepper flakes if using. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
- Create Roux: Sprinkle in the flour and stir constantly for 1–2 minutes to form a roux, which will thicken the soup base.
- Add Broth and Noodles: Slowly whisk in the chicken broth, stirring constantly to remove lumps. Bring the mixture to a boil, then reduce heat to a simmer. Add the broken lasagna noodles and cook uncovered for 10–12 minutes or until pasta is tender, stirring frequently to prevent sticking.
- Incorporate Chicken and Dairy: Add the cooked shredded chicken, half-and-half or heavy cream, grated Parmesan, and shredded mozzarella cheese. Stir continuously until cheeses are melted and the soup becomes creamy.
- Add Greens and Season: If using, stir in fresh spinach and cook for 1–2 minutes until wilted. Season the soup with salt and black pepper to taste.
- Serve: Ladle the hot soup into bowls and optionally top with extra Parmesan cheese for added flavor.
