  • 1 1/2 cups shredded mozzarella cheese

Instructions

  1. Sauté Aromatics: In a large pot or Dutch oven, heat olive oil over medium heat. Add chopped onion and cook for 4–5 minutes until soft and translucent, stirring occasionally.

  4. Add Broth and Noodles: Slowly whisk in the chicken broth, stirring constantly to remove lumps. Bring the mixture to a boil, then reduce heat to a simmer. Add the broken lasagna noodles and cook uncovered for 10–12 minutes or until pasta is tender, stirring frequently to prevent sticking.
  5. Incorporate Chicken and Dairy: Add the cooked shredded chicken, half-and-half or heavy cream, grated Parmesan, and shredded mozzarella cheese. Stir continuously until cheeses are melted and the soup becomes creamy.
  6. Add Greens and Season: If using, stir in fresh spinach and cook for 1–2 minutes until wilted. Season the soup with salt and black pepper to taste.
