Sauce

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 small shallot, finely chopped
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine or seafood stock
  • 1 cup tomato puree or crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon lemon juice
  • 1/2 cup heavy cream

Seafood & Garnish

  • 1 1/2 cups cooked lobster meat, chopped
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh basil or parsley
  • Salt and black pepper to taste

Instructions

  1. Cook Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Reserve 1/2 cup of the pasta cooking water before draining the pasta. Set drained pasta aside.
  2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic, chopped shallot, and red pepper flakes if using. Sauté for 2 to 3 minutes until softened and fragrant.
  3. Deglaze and Simmer Sauce: Pour in the white wine or seafood stock to deglaze the pan, scraping up any browned bits. Let it simmer for 2 to 3 minutes to reduce slightly. Stir in tomato puree, tomato paste, and lemon juice, then simmer the mixture for 5 to 7 minutes, allowing it to thicken slightly.
  4. Add Cream and Lobster: Reduce heat to low and stir in the heavy cream. Add the chopped cooked lobster meat and simmer gently for 2 to 3 minutes until the lobster is warmed through.
  5. Toss Pasta and Finish: Add the drained pasta to the sauce and toss well to coat. Add reserved pasta water a little at a time if needed to loosen the sauce. Stir in grated Parmesan cheese and season with salt and freshly ground black pepper to taste.
  6. Serve: Plate the pasta immediately, garnishing with chopped fresh basil or parsley and additional Parmesan cheese if desired for an extra touch of flavor and presentation.

Notes

  • For an extra-rich flavor, add a pat of butter to the sauce just before serving.
