  • 2 tbsp olive oil

Creamy Sun-Dried Tomato Sauce:

  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes in oil, drained and chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 tsp dried basil
  • 1/4 tsp crushed red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Season the chicken: Season the chicken breasts with salt and pepper on both sides.
  2. Cook the chicken: Heat olive oil in a large skillet, cook chicken breasts until golden brown and cooked through. Set aside.
  3. Prepare the sauce: In the same skillet, sauté onion, garlic, add sun-dried tomatoes, chicken broth, heavy cream, basil, and red pepper flakes. Simmer until thickened.
  4. Finish the dish: Stir in Parmesan cheese, return chicken to skillet, simmer in sauce. Garnish and serve hot.
