Instructions
- Cook the sausage: In a large pot or Dutch oven, heat olive oil over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and fully cooked, about 5 to 6 minutes.
- Sauté onion and garlic: Add the diced onion to the pot and cook for 3 to 4 minutes until softened. Stir in the minced garlic and cook for an additional minute to release its aroma.
- Add potatoes and broth: Mix in the diced Yukon Gold potatoes, chicken broth, dried thyme, and crushed red pepper flakes if using. Bring the mixture to a boil, then reduce the heat to a simmer and cook for 15 to 20 minutes, or until the potatoes are tender.
- Incorporate cream and greens: Stir in the heavy cream and chopped kale or spinach. Continue to simmer for another 3 to 4 minutes until the greens have wilted and the soup has thickened slightly to a creamy consistency.
- Season and serve: Taste the soup and season with salt and black pepper as needed. Ladle the soup into bowls and top with grated Parmesan cheese if desired. Serve hot for a comforting meal.
