Description

This creamy potato and sausage soup is a hearty, comforting dish perfect for chilly days. Made with tender Yukon Gold potatoes, flavorful Italian sausage, and nutritious greens, it blends rich creaminess with savory spices for a satisfying one-pot meal.

Ingredients

Scale

Meat & Oils

  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy), casings removed

Vegetables & Aromatics

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups Yukon Gold potatoes, diced
  • 2 cups chopped kale or spinach

Liquids & Spices

  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste

Optional Toppings

  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Cook the sausage: In a large pot or Dutch oven, heat olive oil over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and fully cooked, about 5 to 6 minutes.
  2. Sauté onion and garlic: Add the diced onion to the pot and cook for 3 to 4 minutes until softened. Stir in the minced garlic and cook for an additional minute to release its aroma.
  3. Add potatoes and broth: Mix in the diced Yukon Gold potatoes, chicken broth, dried thyme, and crushed red pepper flakes if using. Bring the mixture to a boil, then reduce the heat to a simmer and cook for 15 to 20 minutes, or until the potatoes are tender.
  4. Incorporate cream and greens: Stir in the heavy cream and chopped kale or spinach. Continue to simmer for another 3 to 4 minutes until the greens have wilted and the soup has thickened slightly to a creamy consistency.
  5. Season and serve: Taste the soup and season with salt and black pepper as needed. Ladle the soup into bowls and top with grated Parmesan cheese if desired. Serve hot for a comforting meal.

Notes

  • Yukon Gold potatoes provide a naturally creamy texture, but russet or red potatoes can also be used.
  • For a lighter soup, substitute heavy cream with half-and-half or whole milk.
  • This soup reheats very well and can be prepared a day in advance for convenience.
