Ingredients
Scale
Main Ingredients
- 3 Tbsp butter
- 8 oz sliced fresh mushrooms
- 8 oz orzo pasta (uncooked)
- 2 cloves garlic (minced)
- 2 cups chicken broth
- ½ cup crumbled feta cheese
- salt and pepper (to taste)
Garnish
- dried parsley (for garnish)
Instructions
- Melt Butter and Sauté Mushrooms and Orzo: In a skillet over medium heat, melt the butter. Add the sliced mushrooms and the dry orzo pasta. Cook while stirring occasionally until some of the orzo turns a golden brown color, which enhances the flavor through light toasting.
- Add Garlic and Cook: Stir in the minced garlic and continue cooking for about one more minute, allowing the garlic to become fragrant without burning.
- Add Broth and Simmer: Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 10 minutes. Stir occasionally to prevent sticking, until the orzo is tender and has absorbed most of the liquid.
- Finish with Feta and Seasoning: Remove the skillet from heat. Stir in the crumbled feta cheese, then season with salt and pepper to taste. Mix well to combine the flavors evenly.
- Garnish and Serve: Garnish with a sprinkle of dried parsley for a touch of color and freshness. Serve warm as a comforting side dish or light main course.
Notes
- Use fresh mushrooms for the best flavor and texture. Cremini or white button mushrooms work well.
- For a vegetarian version, substitute vegetable broth for chicken broth.
- To make it vegan, omit the feta cheese or use a vegan cheese alternative.
- Stir occasionally during simmering to prevent the orzo from sticking to the pan.
- Adjust the amount of salt carefully depending on the saltiness of your chicken broth and feta cheese.
