Description

This creamy gnocchi soup is a comforting and hearty dish perfect for a quick weeknight meal. Made with sautéed vegetables, tender gnocchi, fresh spinach, and a touch of heavy cream, this soup combines rich flavors and a creamy texture in just 25 minutes. It’s satisfying, easy to make, and serves as a wholesome meal for four.

Ingredients

Scale

Vegetables & Aromatics

  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, chopped
  • 1 cup spinach, chopped

Liquids & Base

  • 1 tablespoon olive oil
  • 2 cups vegetable broth
  • 1 can diced tomatoes (approx. 14.5 oz)
  • 1/2 cup heavy cream

Other

  • 1 cup gnocchi
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil: Place a large pot over medium heat and add 1 tablespoon of olive oil. Allow it to warm up so it coats the surface evenly.
  2. Sauté aromatics and vegetables: Add the chopped onion, minced garlic, and chopped carrot to the pot. Cook for about 5 minutes, stirring occasionally, until the onion becomes translucent and the carrot softens.
  3. Add broth and tomatoes: Pour in 2 cups of vegetable broth and the entire can of diced tomatoes. Stir to combine and bring the mixture to a boil.
  4. Cook the gnocchi: Add 1 cup of gnocchi to the boiling soup. Let them cook for about 5 minutes, until they float to the surface, indicating they are done.
  5. Add spinach and cream: Stir in the chopped spinach and 1/2 cup heavy cream. Lower the heat and simmer the soup for an additional 5 minutes to allow it to thicken and the flavors to meld.
  6. Season and serve: Taste the soup and season with salt and pepper to your liking. Serve hot and enjoy your creamy gnocchi soup!

Notes

  • For a dairy-free version, substitute heavy cream with coconut cream or a plant-based cream alternative.
  • Feel free to add other vegetables like mushrooms or zucchini for added texture and nutrition.
  • Use store-bought gnocchi for convenience, or homemade if you prefer.
  • To make the soup spicier, add a pinch of red pepper flakes while sautéing the vegetables.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently before serving.
