Description

This Creamy Chicken Gnocchi Soup is a comforting, hearty dish made with tender shredded chicken, pillowy potato gnocchi, and fresh spinach in a rich, creamy broth flavored with herbs and sautéed vegetables. Perfect for a cozy meal, it combines classic flavors in an easy stovetop soup that can be ready in just 35 minutes.

Ingredients

Scale

Soup Base

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup celery, sliced
  • 1/2 cup carrots, sliced
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried parsley
  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken broth
  • 1 cup whole milk
  • 1 cup heavy cream

Main Ingredients

  • 1 cup cooked shredded chicken
  • 1 package (16 oz) potato gnocchi
  • 2 cups fresh spinach, roughly chopped

Seasonings and Garnish

  • Salt and black pepper, to taste
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Sauté Vegetables: In a large pot, heat the butter and olive oil over medium heat. Add the diced onion, minced garlic, sliced celery, and sliced carrots. Cook for 4 to 5 minutes, stirring occasionally, until the vegetables are softened. Add the dried thyme and parsley, stirring to combine.
  2. Make Roux and Add Liquids: Sprinkle the all-purpose flour over the vegetables and cook for 1 minute, stirring constantly to form a roux. Slowly whisk in the low-sodium chicken broth, followed by the whole milk and heavy cream, ensuring the mixture is smooth and slightly thickened. Bring the soup to a gentle simmer.
  3. Add Chicken and Gnocchi: Stir the shredded cooked chicken and potato gnocchi into the pot. Cook for 5 to 6 minutes, or until the gnocchi float to the surface and are tender.
  4. Wilt Spinach and Season: Add the roughly chopped fresh spinach and cook for an additional 1 to 2 minutes until wilted. Season the soup with salt and black pepper to taste.
  5. Serve: Ladle the warm soup into bowls and top with grated Parmesan cheese if desired. Serve immediately for the best taste.

Notes

  • For extra richness, substitute all the milk with heavy cream.
  • Leftover rotisserie chicken is an excellent shortcut for this recipe.
  • The soup can be prepared ahead of time and gently reheated on the stovetop before serving.
