Ingredients
Salmon Fillets:
4 salmon fillets (skin-on or skinless, about 6 oz each)
Seafood Stuffing:
½ cup cooked shrimp (chopped), ½ cup lump crab meat, ¼ cup cream cheese (softened), 2 tablespoons mayonnaise, 1 tablespoon lemon juice, 1 teaspoon Old Bay seasoning, 1 teaspoon Dijon mustard, 1 garlic clove (minced), 2 tablespoons chopped green onions, ¼ cup shredded Parmesan cheese, salt and pepper to taste, 1 tablespoon olive oil
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- Prepare the stuffing: In a medium bowl, combine chopped shrimp, crab meat, cream cheese, mayonnaise, lemon juice, Old Bay seasoning, Dijon mustard, garlic, green onions, and Parmesan cheese. Mix well.
- Prepare the salmon: Make a horizontal pocket in each salmon fillet. Season with salt and pepper.
- Stuff the salmon: Fill each salmon pocket with the seafood mixture. Drizzle with olive oil.
- Bake: Bake the stuffed salmon for 18–20 minutes until cooked through.
- Serve: Serve warm with lemon wedges or over your favorite sides.
Notes
- You can prepare the stuffing mixture up to a day in advance and refrigerate until ready to use.
- Substitute Greek yogurt for mayo if preferred.
- This dish also works well with trout or tilapia.
