For the Soup:
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1 cup cooked shredded chicken
- 3/4 cup pastina pasta (or any tiny pasta like acini di pepe or orzo)
- 1/2 teaspoon dried thyme
- 1/4 teaspoon turmeric (optional, for color)
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped
- Grated Parmesan cheese for serving (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery, and sauté for 5–6 minutes until softened.
- Stir in the garlic and cook for 1 minute more.
- Pour in the chicken broth and bring to a gentle boil. Stir in the shredded chicken, pastina, dried thyme, turmeric (if using), salt, and pepper.
- Reduce heat to a simmer and cook for 10–12 minutes, or until the pasta is tender. Stir occasionally to prevent sticking.
- Taste and adjust seasoning if needed. Remove from heat and stir in fresh parsley.
- Serve warm with grated Parmesan on top and crusty bread on the side if desired.
Notes
- This soup is perfect for using leftover rotisserie chicken.
- For a richer flavor, you can add a tablespoon of butter at the end.
- Pastina tends to absorb liquid as it sits, so add more broth when reheating leftovers.
