This comforting Corn and Broccoli Rice Casserole combines tender cooked rice with nutritious broccoli and sweet creamed corn, all baked under a crispy, buttery cracker topping. It’s an easy, flavorful side dish perfect for family dinners or potlucks, with savory seasoning and a golden crust that adds delightful texture.

Ingredients

Scale

Main Ingredients

  • 1½ cups cooked rice
  • 1 (10-oz) package frozen chopped broccoli, thawed and drained
  • 1 (14.75-oz) can creamed corn
  • 1 large egg, beaten
  • ¾ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp seasoned salt, or to taste
  • ¼ tsp black pepper, or to taste

Topping

  • ½ cup crushed Ritz crackers
  • ¼ cup butter, melted

Instructions

  1. Preheat Oven: Preheat your oven to 350ºF (175ºC). Lightly spray a 9×9-inch baking pan with cooking spray to prevent sticking, then set aside.
  2. Mix Ingredients: In a large mixing bowl, combine the cooked rice, thawed and drained broccoli, creamed corn, beaten egg, onion powder, garlic powder, seasoned salt, and black pepper. Stir until all ingredients are evenly incorporated.
  3. Transfer to Pan: Pour the mixed rice and vegetable mixture evenly into the prepared baking pan, spreading it out smoothly.
  4. Prepare Topping: In a small bowl, toss the crushed Ritz crackers with the melted butter ensuring all crumbs are well coated to create a flavorful crust.
  5. Top and Bake: Sprinkle the buttery cracker mixture evenly over the rice and broccoli mixture in the pan. Bake uncovered in the preheated oven for 25 to 30 minutes until the topping is golden brown and the casserole is heated through.

Notes

  • Make sure to thoroughly drain the thawed broccoli to prevent excess moisture in the casserole.
  • For a richer flavor, use fresh butter for the topping instead of margarine or oil.
  • This dish can be prepared a day ahead and baked just before serving for convenience.
  • Substitute Ritz crackers with breadcrumbs or crushed cornflakes for a different texture.
  • Leftovers can be refrigerated and reheated in the oven or microwave.
