Description

Classic Italian Pizzelle Cookies are delicate, crisp waffle cookies flavored with vanilla and optionally anise. These traditional treats are quick to make using a pizzelle iron, perfect for holiday celebrations or as a sweet snack.

Ingredients

Scale

Wet Ingredients

  • 3 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon anise extract (optional)

Dry Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder

For Serving

  • Powdered sugar for dusting

Instructions

  1. Preheat the Pizzelle Iron: Follow the manufacturer’s instructions to preheat your pizzelle iron until it’s ready for cooking.
  2. Whisk the Eggs and Sugar: In a large bowl, vigorously whisk together the eggs and granulated sugar for 2-3 minutes until the mixture is pale and slightly thickened, ensuring a light batter.
  3. Add Wet Ingredients: Mix in the melted butter, vanilla extract, and anise extract if using, stirring until fully incorporated.
  4. Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour and baking powder to evenly distribute the leavening agent.
  5. Mix Batter: Gradually add the dry ingredients to the wet ingredients, stirring gently until the batter is smooth and well combined without overmixing.
  6. Cook the Pizzelle: Drop about one tablespoon of batter onto the center of each section of the preheated pizzelle iron. Close the lid and cook for 30 to 60 seconds, or until the pizzelle are golden brown and crisp.
  7. Cool & Serve: Carefully remove the pizzelle from the iron and place them on a wire rack to cool completely. Repeat the cooking process with the remaining batter.
  8. Dust with Powdered Sugar: Once cooled, lightly dust the pizzelle cookies with powdered sugar before serving for an elegant finishing touch.

Notes

  • If you do not have anise extract, you can omit it or substitute with a small amount of anise seeds ground finely.
  • Ensure the pizzelle iron is well preheated to prevent sticking and to get evenly cooked cookies.
  • These cookies can be stored in an airtight container at room temperature for up to one week to maintain crispness.
  • For a festive twist, try adding lemon or orange zest to the batter instead of anise extract.
