Cinnamon Sugar Coating

  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Prepare the Dough: In a medium saucepan over medium heat, combine water, sugar, salt, and butter. Bring to a gentle boil and then remove from heat. Stir in all the flour at once until a thick dough forms that pulls away from the sides of the pan.
  2. Cool and Add Eggs: Let the dough cool for 5 minutes, then beat in eggs one at a time, mixing thoroughly after each addition to create a smooth batter. Stir in the vanilla extract.
  3. Heat Oil: Heat vegetable oil in a deep pot to 350°F (175°C), ensuring there is about 2 inches of oil for frying.
  4. Pipe the Dough: Transfer the dough to a piping bag with a large round or star tip. Pipe 1-inch pieces directly into the hot oil, using scissors to cut the dough.
  5. Fry the Poppers: Fry the dough pieces in batches for 2–3 minutes, turning as needed until golden brown and crisp.
  6. Drain and Coat: Remove poppers with a slotted spoon, drain on paper towels, then immediately toss them in the cinnamon sugar mixture to coat evenly.
  7. Serve: Serve the churro poppers warm, optionally with chocolate or caramel dipping sauces for added indulgence.
