- Prepare the yogurt mixture: Add the chopped strawberries, plain Greek yogurt, honey, and vanilla extract to a large bowl. Combine thoroughly until the mixture is evenly blended.
- Form the clusters: Using a spoon, scoop about 2 tablespoons of the yogurt mixture and place each scoop onto a parchment paper-lined baking sheet or large plate. Shape them gently to form clusters. You should be able to make around 10 clusters.
- Freeze the clusters: Place the baking sheet with the yogurt clusters into the freezer. Freeze until the clusters are completely frozen and solid, which takes about 1-2 hours.
- Melt the chocolate: Add the semi-sweet chocolate chips and coconut oil to a microwave-safe bowl. Microwave in short intervals of 15 to 30 seconds, stirring well after each interval until the chocolate is fully melted and smooth.
- Coat the frozen clusters: Remove the frozen yogurt clusters from the freezer. Using a spoon, carefully dip each cluster into the melted chocolate to coat it thoroughly. Place each coated cluster back onto the parchment-lined baking sheet. Optionally, sprinkle a pinch of sea salt on top for added flavor.
