- 1/4 cup melted butter
For the Cheesecake:
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 cup creamy peanut butter
- 1/4 cup sour cream
- 1 teaspoon vanilla extract
For the Topping:
- 1/2 cup semi-sweet chocolate chips
- 2 tablespoons heavy cream
- Chopped peanuts and chocolate drizzle for topping (optional)
Instructions
- Preheat the oven: Preheat the oven to 325°F (163°C) and line an 8×8-inch baking pan with parchment paper.
- Prepare the Crust: Mix chocolate cookie crumbs and melted butter, press into the pan to form the crust.
- Make the Cheesecake Batter: Beat cream cheese and sugar, add eggs one at a time, mix in peanut butter, sour cream, and vanilla until smooth.
- Bake: Pour the cheesecake batter over the crust, bake for 35–40 minutes until set but slightly jiggly.
- Cool and Chill: Let cool, then refrigerate for at least 4 hours or overnight.
- Add Topping: Melt chocolate chips with heavy cream, drizzle over bars. Sprinkle with chopped peanuts if desired.
- Serve: Slice into bars and serve chilled.
