Description

Delight in these decadent Chocolate-Covered Strawberry Brownies that combine fudgy baked brownies with fresh, juicy strawberries and a luscious layer of melted chocolate. Perfect for special occasions or a sweet treat, these easy-to-make brownies are topped with strawberries and finished with a smooth chocolate coating, providing a rich, fruity twist to classic brownies.

Ingredients

Scale

Brownie Base

  • 1 box brownie mix (plus ingredients listed on the box – typically eggs, oil, and water)

Toppings

  • 1 pound fresh strawberries, hulled and sliced
  • 1 cup semi-sweet chocolate chips or chocolate melting wafers
  • 1 tablespoon coconut oil or butter (for smooth melting)
  • Optional: white chocolate for drizzling

Instructions

  1. Prepare Brownie Batter: Preheat your oven according to the brownie mix package. Prepare the brownie batter following the package instructions, which typically include adding eggs, oil, and water. Pour the batter into a greased or parchment-lined 9×9-inch baking pan.
  2. Bake Brownies: Bake the brownies in the oven for 30–35 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Remove from oven and allow to cool completely in the pan.
  3. Add Strawberries: Once the brownies are completely cooled, evenly arrange the sliced strawberries on top. Gently press them into the surface of the brownies to help them stick.
  4. Melt Chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips with the coconut oil or butter. Heat in 20–30 second intervals, stirring in between, until the chocolate is fully melted and smooth.
  5. Coat Strawberries with Chocolate: Pour the melted chocolate over the strawberries and spread gently with a spatula to cover them evenly. For decoration, drizzle melted white chocolate over the top in a zigzag pattern if desired.
  6. Chill and Set: Place the brownies in the refrigerator for 20–30 minutes to allow the chocolate to set firmly before slicing into squares.

Notes

  • Use dark chocolate for a richer flavor or milk chocolate for a sweeter taste.
  • Due to the fresh strawberries, best served within 1–2 days and store refrigerated.
  • Ensure brownies are completely cooled before adding toppings to prevent melting the strawberries or chocolate prematurely.
