Scale
Dry Ingredients:
- 1 3/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 3/4 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 2 cups granulated sugar
Wet Ingredients:
- 2 large eggs (room temperature)
- 1 cup buttermilk (room temperature)
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup hot water or hot coffee
Instructions
- Preheat the oven: Preheat the oven to 350°F. Grease and flour two 9-inch round cake pans, or line them with parchment paper.
- Mix dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, cocoa powder, salt, and sugar.
- Combine wet ingredients: In another bowl, whisk together the eggs, buttermilk, oil, and vanilla extract until smooth.
- Combine mixtures: Pour the wet mixture into the dry ingredients and mix until just combined. Slowly stir in the hot water or coffee until the batter is smooth and slightly thin.
- Bake: Divide the batter evenly between the prepared pans. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and frost: Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely. Frost with your favorite chocolate buttercream or ganache.
Notes
- Coffee enhances the chocolate flavor but won’t make the cake taste like coffee.
- This cake can also be made as cupcakes or in a 9×13-inch pan.
- For extra richness, use Dutch-processed cocoa.
