  • 2 large eggs (room temperature)
  • 1 cup buttermilk (room temperature)
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup hot water or hot coffee

Instructions

  1. Preheat the oven: Preheat the oven to 350°F. Grease and flour two 9-inch round cake pans, or line them with parchment paper.
  2. Mix dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, cocoa powder, salt, and sugar.
  3. Combine wet ingredients: In another bowl, whisk together the eggs, buttermilk, oil, and vanilla extract until smooth.
  4. Combine mixtures: Pour the wet mixture into the dry ingredients and mix until just combined. Slowly stir in the hot water or coffee until the batter is smooth and slightly thin.
  5. Bake: Divide the batter evenly between the prepared pans. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool and frost: Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely. Frost with your favorite chocolate buttercream or ganache.

  • Coffee enhances the chocolate flavor but won’t make the cake taste like coffee.
