Instructions
- Preheat and prepare the muffin tin. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners to prevent sticking and make cleanup easier.
- Mix dry ingredients. In a large mixing bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, and salt until evenly combined.
- Combine wet ingredients. In a separate bowl, beat the light brown sugar, eggs, milk, vegetable oil, vanilla extract, and 1/2 cup almond butter together until the mixture is smooth and well blended.
- Combine wet and dry mixtures. Pour the wet ingredient mixture into the dry ingredients bowl and stir gently until just combined to avoid overmixing, which can make muffins tough.
- Add chocolate chips. If desired, fold in the mini chocolate chips evenly through the batter for bursts of extra chocolate flavor in each bite.
- Fill muffin cups. Distribute the batter evenly among the lined muffin cups, filling each about three-quarters full to allow space for rising.
