Scale
Chicken and Vegetables
- 1 pound boneless, skinless chicken breasts, thinly sliced
- 4 cups broccoli florets
- 2 tablespoons vegetable oil, divided
- 2 garlic cloves, minced
- 1 teaspoon fresh ginger, grated
Sauce
- ¼ cup low-sodium soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon cornstarch
- 1 tablespoon brown sugar
- ½ cup chicken broth
- 1 teaspoon sesame oil
Instructions
- Prepare the sauce: In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, cornstarch, brown sugar, chicken broth, and sesame oil until smooth. Set aside.
- Cook the chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced chicken and cook for 4 to 5 minutes, stirring occasionally, until the chicken is browned and cooked through. Transfer the cooked chicken to a plate and set aside.
- Sauté the aromatics and broccoli: Add the remaining tablespoon of vegetable oil to the skillet. Toss in the minced garlic, grated ginger, and broccoli florets. Sauté for 2 minutes until fragrant.
- Steam the broccoli: Pour in 2 tablespoons of water, cover the skillet, and let the broccoli steam for 2 to 3 minutes until it becomes tender but still crisp.
- Combine chicken and sauce: Return the cooked chicken to the skillet and stir to combine. Stir the sauce once more and pour it over the chicken and broccoli in the skillet. Continue cooking, stirring constantly, for 2 to 3 minutes until the sauce thickens and evenly coats the ingredients.
- Serve: Remove from heat and serve immediately, ideally over steamed rice for a complete meal.
Notes
- For extra heat, add a pinch of red pepper flakes or a dash of sriracha sauce during cooking.
