Description

A hearty and flavorful Southern-style Chicken Wing Boil featuring tender chicken wings, sweet corn, baby red potatoes, and smoky sausage, all simmered in a spiced broth and enhanced with garlic, lemon, and butter for a perfect summer gathering meal.

Ingredients

Scale

Proteins

  • 2 pounds chicken wings (split and tips removed)
  • 1 smoked sausage (sliced into rounds)

Vegetables & Fruit

  • 4 ears corn (cut into thirds)
  • 1 pound baby red potatoes
  • 1 lemon (halved)
  • 6 cloves garlic (smashed)
  • 1 onion (quartered)
  • 1/4 cup chopped fresh parsley (for garnish)

Seasonings & Spices

  • 1 tablespoon Old Bay seasoning
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Extra Old Bay or Cajun seasoning for serving

Others

  • 4 tablespoons unsalted butter

Instructions

  1. Prepare the broth: Fill a large stockpot with 6 to 8 quarts of water and bring it to a boil. Add the lemon halves, smashed garlic cloves, quartered onion, Old Bay seasoning, Cajun seasoning, salt, and black pepper. Let it simmer for 10 minutes so the flavors infuse the broth deeply.
  2. Cook the potatoes: Add the baby red potatoes to the simmering broth and cook for 10 minutes. Potatoes should start becoming tender but not fully cooked yet to ensure even cooking with the other ingredients.
  3. Add the chicken wings: Next, add the chicken wings to the pot and cook for 15 minutes or until they are nearly cooked through and tender.
  4. Include corn and sausage: Add the cut corn and sliced smoked sausage to the pot. Continue boiling everything together for another 5 to 7 minutes, or until all ingredients are tender and fully cooked.
  5. Drain and serve: Carefully drain the cooking liquid and transfer the boil to a large serving platter or tray. Melt the unsalted butter and drizzle it evenly over the top. Sprinkle with chopped fresh parsley and extra Old Bay or Cajun seasoning to taste. Serve hot alongside lemon wedges and preferred dipping sauces for a delicious communal meal.

Notes

  • For extra flavor and texture, grill or broil the chicken wings briefly after boiling to achieve a crispy exterior.
  • To add a seafood twist, incorporate shrimp or crab legs in the last few minutes of cooking.
  • Adjust the heat level by increasing or decreasing the amount of Cajun seasoning according to your spice preference.
