Chicken Skewers:
- 1½ lbs boneless skinless chicken breasts, cut into 1-inch cubes
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
Optional Veggies:
- Assorted veggies like bell peppers, onions, or zucchini, cut into chunks
Instructions
- Marinate the Chicken: In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add the chicken cubes and stir to coat evenly. Marinate in the refrigerator for at least 30 minutes.
- Preheat and Prepare: Preheat oven to 425°F. Line a baking sheet with foil. Soak wooden skewers in water if using.
- Skewer and Bake: Thread the marinated chicken onto skewers, adding veggies if desired. Place skewers on the baking sheet and bake for 20–25 minutes, turning once, until fully cooked and browned.
- Rest and Serve: Let the skewers rest for 5 minutes before serving.
Notes
- Enhance the dish with tzatziki sauce, hummus, or serve over rice.
- For a charred finish, broil the skewers for the last 2–3 minutes.
