Description

This Chicken Satay recipe features tender strips of marinated chicken grilled to perfection, infused with aromatic spices and creamy coconut milk. Served with a rich peanut sauce, it’s a classic Thai-inspired dish that’s perfect for a quick weeknight dinner or party appetizer.

Ingredients

Scale

Chicken and Marinade

  • 1 ½ pounds boneless skinless chicken thighs or breasts, cut into thin strips
  • ½ cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon garlic powder
  • ½ teaspoon ground coriander
  • ½ teaspoon salt

Additional

  • Wooden skewers (soaked in water for 30 minutes)
  • Peanut sauce (for serving)
  • Cucumber salad or jasmine rice (optional, for serving)

Instructions

  1. Prepare Marinade: In a large bowl, whisk together coconut milk, soy sauce, brown sugar, curry powder, turmeric, garlic powder, ground coriander, and salt until well combined to create the marinade.
  2. Marinate Chicken: Add the thin strips of chicken to the marinade and toss thoroughly to coat each piece. Cover the bowl and refrigerate for at least 1 hour, or for best flavor, marinate overnight.
  3. Preheat Grill: Preheat your grill or grill pan over medium-high heat to ensure it’s hot and ready for cooking the chicken skewers.
  4. Assemble Skewers: Thread the marinated chicken strips onto the soaked wooden skewers, distributing the meat evenly without overcrowding.
  5. Grill Chicken: Place the skewers on the grill and cook for 3–4 minutes on each side until the chicken is fully cooked through and develops a nice charred exterior.
  6. Serve: Remove from the grill and serve the chicken satay hot with peanut sauce alongside cucumber salad or jasmine rice for a complete meal.

Notes

  • You can substitute coconut milk with Greek yogurt for a thicker, tangier marinade.
  • Great for meal prep or as party appetizers.
  • Soaking the wooden skewers in water helps prevent them from burning during grilling.
