Instructions

- Bread the Chicken: Dredge each chicken cutlet first in the flour, shaking off any excess, then dip into the beaten eggs, and finally coat thoroughly with the breadcrumb mixture, pressing gently so it adheres well.
- Fry Chicken: Heat vegetable oil in a large skillet over medium-high heat. Fry the breaded chicken cutlets for about 3 to 4 minutes on each side, or until they turn golden brown and are cooked through.
- Assemble for Baking: Place the fried chicken cutlets on a baking sheet. Spoon a generous amount of marinara sauce over each cutlet, then sprinkle evenly with shredded mozzarella cheese.
- Bake: Bake in the preheated oven for 10 to 12 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve: Remove from the oven, garnish with chopped fresh basil or parsley if using, and serve hot over cooked spaghetti or your favorite pasta.
