Main Ingredients
- 12 oz egg noodles
- 2 cups cooked chicken (shredded or diced)
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup sour cream
- 1/2 cup milk
- 1 cup frozen peas and carrots (thawed)
- 1 cup shredded cheddar cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
Topping
- 1/2 cup crushed butter crackers or breadcrumbs
- 2 tablespoons melted butter
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
- Cook Noodles: Boil the egg noodles according to package instructions until al dente, then drain well to avoid sogginess in the casserole.
- Mix Ingredients: In a large mixing bowl, combine the cooked chicken, cream of chicken soup, sour cream, milk, thawed peas and carrots, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Stir until all ingredients are evenly mixed.
- Add Noodles: Fold the cooked noodles gently into the mixture, ensuring everything is well combined but noodles remain intact.
- Assemble Casserole: Transfer the mixture into a greased 9×13-inch baking dish and spread evenly.
- Prepare Topping: In a small bowl, mix crushed butter crackers or breadcrumbs with melted butter until well coated, then sprinkle this evenly over the top of the casserole.
- Bake: Place the casserole in the preheated oven and bake uncovered for 25–30 minutes, or until the casserole is hot, bubbly, and the topping is golden brown.
- Rest and Serve: Remove the casserole from the oven and let it sit for 5 minutes before serving to allow it to set.
Notes
- Use rotisserie chicken to save preparation time without sacrificing flavor.
- For variation, substitute cream of chicken soup with cream of mushroom or cream of celery soup.
- Add sautéed onions or mushrooms to the mixture for extra depth and flavor.
