Description

This Chicken Noodle Casserole is a comforting and creamy baked dish featuring tender egg noodles, shredded chicken, and a medley of vegetables in a cheesy sauce. Perfect for an easy family dinner, it combines convenience with classic flavors and can be prepped ahead for busy nights.

Ingredients

Scale

Main Ingredients

  • 12 ounces egg noodles
  • 2 cups cooked shredded chicken (rotisserie works great)
  • 1 cup frozen peas and carrots (thawed)
  • 1 cup frozen corn
  • 1 (10.5-ounce) can cream of chicken soup
  • ½ cup sour cream
  • ½ cup milk
  • 1 ½ cups shredded cheddar cheese (divided)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Topping (Optional)

  • ½ cup crushed buttery crackers or breadcrumbs
  • 1 tablespoon melted butter

Instructions

  1. Preheat oven and prepare dish: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Cook noodles: Boil the egg noodles according to package instructions until al dente, then drain and set aside to cool slightly.
  3. Make the sauce and combine ingredients: In a large bowl, whisk together the cream of chicken soup, sour cream, milk, 1 cup of cheddar cheese, garlic powder, onion powder, salt, and black pepper until smooth. Gently fold in shredded chicken, thawed peas and carrots, frozen corn, and cooked noodles until evenly combined.
  4. Assemble casserole: Pour the mixture into the greased baking dish. Sprinkle the remaining ½ cup of cheddar cheese evenly over the top. If desired, mix crushed crackers or breadcrumbs with melted butter and sprinkle this mixture on top for a crunchy topping.
  5. Bake: Place the casserole in the preheated oven and bake for 25–30 minutes, or until the casserole is hot, bubbly, and the topping is golden brown.
  6. Rest and serve: Allow the casserole to cool slightly before serving to let it set and make it easier to dish out portions.

Notes

  • Add cooked mushrooms or sautéed onions to the mixture for extra flavor and texture.
  • This casserole can be assembled ahead of time and refrigerated for up to 24 hours before baking, making it great for meal prep.
  • Use rotisserie chicken to save time without sacrificing flavor.
  • Adjust seasoning and cheese amount according to taste preferences.
