Main Soup:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • Salt and black pepper to taste
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken
  • 1/2 cup heavy cream (optional)

For the Dumplings:

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons butter, melted
  • 3/4 cup milk

Instructions

  1. Main Soup: In a large pot, sauté onion, garlic, carrots, and celery. Season with thyme, parsley, salt, and pepper. Add chicken broth and shredded chicken. Simmer.
  2. For the Dumplings: Mix flour, baking powder, salt, butter, and milk. Drop spoonfuls into the simmering soup. Cover and cook for 15 minutes. Stir in cream.
