Description

These chicken and avocado quesadillas are a quick, satisfying meal loaded with juicy chicken, creamy avocado, and gooey melted cheese between crisp golden tortillas. Perfect for a weeknight dinner, game day snack, or lunch on the go, they come together fast and are full of flavor.

Ingredients

Scale

Main Ingredients

  • 2 cooked chicken breasts (shredded or chopped)
  • 1 ripe avocado (sliced or mashed)
  • 1 ½ cups shredded Mexican blend or cheddar cheese
  • 4 large flour tortillas
  • 1 tablespoon olive oil or butter

Spices & Seasonings

  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • ¼ teaspoon chili powder
  • Salt and pepper to taste

Optional Toppings

  • Fresh cilantro
  • Lime wedges
  • Sour cream
  • Salsa

Instructions

  1. Prepare Chicken Mixture: In a bowl, combine the shredded chicken with garlic powder, cumin, chili powder, salt, and pepper. Mix well to evenly coat the chicken with the spices.
  2. Heat Skillet: Place a skillet over medium heat and lightly grease it with olive oil or butter to prevent sticking and add flavor.
  3. Assemble Quesadilla: Place one tortilla flat in the skillet. Sprinkle half of the shredded cheese over one side of the tortilla. Add half of the seasoned chicken mixture next, followed by the sliced or mashed avocado. Top with the remaining cheese.
  4. Cook Quesadilla: Fold the tortilla over to close it, creating a half-moon shape. Cook for 2–3 minutes on one side until golden brown and the cheese begins to melt. Carefully flip and cook the other side for another 2–3 minutes until crispy and the cheese is fully melted.
  5. Repeat: Repeat the assembly and cooking process with the second tortilla and remaining ingredients to make the second quesadilla.
  6. Rest and Serve: Remove the quesadillas from the skillet and let them rest for a minute to set. Slice into wedges and serve warm with optional toppings like sour cream, salsa, fresh cilantro, or a squeeze of lime for extra zest.

Notes

  • Rotisserie chicken works great as a shortcut to save time.
  • Add diced tomatoes, onions, or jalapeños for extra flavor and texture.
  • Use whole wheat or gluten-free tortillas to make a healthier or gluten-free version of this dish.
