  • 1/4 cup water

Cheese & Toppings

  • 1.5 cups shredded cheddar or Mexican blend cheese
  • Optional toppings: sour cream, salsa, chopped green onions, diced tomatoes, jalapeños, avocado

Instructions

  1. Preheat and Prepare Potatoes: Preheat the oven to 425°F (220°C). Toss the baby potatoes with olive oil, salt, and pepper until evenly coated, then spread them out in a single layer on a baking sheet.
  2. Roast Potatoes: Roast the potatoes in the preheated oven for 25–30 minutes, flipping them halfway through cooking to ensure they become golden and crispy on all sides.
  3. Cook Ground Beef: While the potatoes roast, heat a skillet over medium heat and cook the ground beef until browned, breaking it up with a spatula. Drain any excess grease from the pan.
  4. Season Beef: Add the taco seasoning and water to the cooked beef. Stir well and let the mixture simmer for about 5 minutes until the sauce thickens and coats the beef.
  5. Assemble Potatoes and Beef: Remove the roasted potatoes from the oven and evenly top them with the seasoned taco beef.
  6. Add Cheese and Melt: Sprinkle the shredded cheddar or Mexican blend cheese over the beef-topped potatoes. Return the baking sheet to the oven for 5–7 minutes, or until the cheese has melted and is bubbly.
  7. Serve with Toppings: Remove from the oven and garnish with your choice of optional toppings such as sour cream, salsa, chopped green onions, diced tomatoes, jalapeños, or avocado before serving.
