Cheesy Taco Potatoes combine crispy roasted baby potatoes topped with flavorful seasoned ground beef and melted cheddar cheese, creating a hearty and delicious meal perfect for a quick weeknight dinner or casual gathering.
Ingredients
Scale
Potatoes
- 1.5 lbs baby potatoes, halved or quartered
- 2 tablespoons olive oil
- Salt and pepper to taste
Beef & Seasoning
- 1 lb ground beef
- 1 packet taco seasoning (or 2 tablespoons homemade)
- 1/4 cup water
Cheese & Toppings
- 1.5 cups shredded cheddar or Mexican blend cheese
- Optional toppings: sour cream, salsa, chopped green onions, diced tomatoes, jalapeños, avocado
Instructions
- Preheat and Prepare Potatoes: Preheat the oven to 425°F (220°C). Toss the baby potatoes with olive oil, salt, and pepper until evenly coated, then spread them out in a single layer on a baking sheet.
- Roast Potatoes: Roast the potatoes in the preheated oven for 25–30 minutes, flipping them halfway through cooking to ensure they become golden and crispy on all sides.
- Cook Ground Beef: While the potatoes roast, heat a skillet over medium heat and cook the ground beef until browned, breaking it up with a spatula. Drain any excess grease from the pan.
- Season Beef: Add the taco seasoning and water to the cooked beef. Stir well and let the mixture simmer for about 5 minutes until the sauce thickens and coats the beef.
- Assemble Potatoes and Beef: Remove the roasted potatoes from the oven and evenly top them with the seasoned taco beef.
- Add Cheese and Melt: Sprinkle the shredded cheddar or Mexican blend cheese over the beef-topped potatoes. Return the baking sheet to the oven for 5–7 minutes, or until the cheese has melted and is bubbly.
- Serve with Toppings: Remove from the oven and garnish with your choice of optional toppings such as sour cream, salsa, chopped green onions, diced tomatoes, jalapeños, or avocado before serving.
Notes
- You can use homemade taco seasoning as a healthier alternative to store-bought packets.
- Adjust the cook time of potatoes depending on their size to ensure they are tender inside and crispy outside.
- Feel free to add other toppings like black olives or cilantro to customize the dish.
- For a spicier kick, add jalapeños either baked with the cheese or fresh on top.
- This dish can be prepared in advance by roasting potatoes and cooking beef ahead, then assembling and melting cheese just before serving.
