Description

Cheesy Colcannon Balls are a delicious Irish appetizer combining creamy mashed potatoes with sautéed cabbage or kale, sharp cheddar cheese, and green onions, all formed into crispy fried bites. Perfect as a comforting snack or party finger food, these golden brown balls offer a delightful blend of flavors and textures with a cheesy center and crunchy exterior.

Ingredients

Scale

Main Ingredients

  • 2 cups mashed potatoes (preferably cold and firm)
  • 1 cup finely shredded green cabbage or kale (lightly sautéed)
  • 1/4 cup green onions (chopped)
  • 1 cup shredded cheddar cheese
  • Salt and black pepper to taste

Breading and Frying

  • 1/2 cup all-purpose flour
  • 2 eggs (beaten)
  • 1 cup breadcrumbs (panko or regular)
  • Vegetable oil for frying

Instructions

  1. Prepare the Mixture: In a mixing bowl, combine the mashed potatoes, sautéed cabbage or kale, green onions, and cheddar cheese. Season with salt and black pepper to taste, then mix thoroughly until an even consistency is achieved.
  2. Form the Balls: Using your hands or a small scoop, shape the mixture into golf ball-sized portions. Place them on a tray and chill in the refrigerator for at least 30 minutes to help them firm up and hold their shape during cooking.
  3. Set up the Breading Station: Arrange three separate bowls with flour, beaten eggs, and breadcrumbs. This setup will be used to coat each ball properly before frying.
  4. Bread the Balls: Roll each chilled ball first in flour to coat evenly, then dip it into the beaten eggs, and finally roll it in the breadcrumbs to create a crispy outer layer.
  5. Heat the Oil: Pour vegetable oil into a deep skillet or fryer and heat it to 350°F (175°C), ensuring the oil is hot enough for frying to get a golden and crispy crust.
  6. Fry the Balls: Fry the colcannon balls in batches to avoid overcrowding, cooking for 2–3 minutes or until they turn golden brown and crisp on all sides.
  7. Drain and Serve: Remove the balls with a slotted spoon and place them on paper towels to drain excess oil. Serve warm with sour cream or mustard dipping sauce for an extra flavor boost.

Notes

  • For added flavor, mix in cooked bacon bits or fresh herbs like parsley or chives into the potato mixture.
  • As a lighter alternative, these colcannon balls can be baked in the oven at 400°F for about 20 minutes, turning halfway through for even crispness.
  • Best served warm alongside sour cream or your favorite mustard dipping sauce.
