  • ½ cup caramelized onions, finely chopped (or caramelized onion relish)
  • ½ cup pickles, finely chopped
  • 1 cup cheddar cheese, finely diced or grated
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fish sauce
  • 1 teaspoon salt
  • Black pepper, to taste

Flatbreads

  • 6–8 flatbreads or pitas (depending on size)
  • Olive oil, for cooking

Burger Dipping Sauce

  • ½ cup Greek yogurt (or garlic aioli or regular mayo)
  • 1 tablespoon Dijon or American mustard
  • 1 tablespoon tomato ketchup
  • 1 garlic clove, crushed (or 1 teaspoon garlic powder)
  • 3 pickle slices, finely chopped
  • 1 teaspoon pickle juice (or white wine vinegar or apple cider vinegar)
  • 2 teaspoons smoked paprika

Instructions

  1. Mix your filling: In a large bowl, combine the ground beef, caramelized onions, chopped pickles, cheddar cheese, Dijon mustard, fish sauce, salt, and a good grind of black pepper. Mix thoroughly to distribute seasoning evenly. Tip: Pan-fry a small amount of the mixture to check seasoning and adjust if needed.
  2. Prepare the flatbreads: Slice each flatbread in half horizontally and carefully pry them open to create pockets. It’s okay if the bread tears slightly, just avoid large holes. For smaller portions or party bites, slice flatbreads into quarters instead.
  3. Make the burger dipping sauce: In a small bowl, combine Greek yogurt, American mustard, tomato ketchup, crushed garlic, chopped pickles, pickle juice, and smoked paprika. Stir well and set aside.
  4. Stuff the flatbreads: Spoon a couple of heaping tablespoons of the cheeseburger filling into each flatbread pocket, filling to about half an inch thick. Press the filling evenly inside to ensure even cooking.
  5. Cook the stuffed flatbreads: Heat a large pan over medium-high heat and add a drizzle of olive oil. Place the stuffed flatbreads in the pan and cook for about 4 minutes on each side until browned and cooked through. Stand the flatbreads upright briefly to crisp the open edges. Remove and repeat with remaining flatbreads.
  6. Serve: Transfer the cooked stuffed flatbreads to a serving platter and serve warm with the prepared burger dipping sauce on the side.

  • Pan-frying a small portion of the filling before stuffing helps you adjust seasoning to your liking.
  • If flatbreads tear too much when opening, you can also slice them into smaller quarters for easier handling.
