Instructions
- Prepare the Egg Mixture: In a medium bowl, crack the eggs and add the milk, salt, and pepper. Whisk vigorously until the mixture is fully combined and slightly frothy, ensuring a light and fluffy texture when cooked.
- Scramble the Eggs: Heat 15 grams of butter in a large non-stick skillet over medium-low heat. Pour in the egg mixture and let it sit undisturbed until the edges begin to set. Gently fold the eggs from the edges towards the center until they’re about 80% cooked but still glossy. Remove from heat and transfer the eggs to a plate.
- Prepare the Skillet for Quesadillas: Wipe the skillet clean, then return it to medium-low heat and melt 7.5 grams of butter to prevent sticking and add flavor.
- Assemble the Quesadilla: Place one tortilla in the skillet and evenly sprinkle 50 grams of shredded cheddar cheese over its entire surface. Spoon half of the scrambled eggs onto one half of the tortilla, then fold the empty half over the filling, pressing gently to seal it.
