  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins (optional)

Cream Cheese Frosting:

  • 4 oz cream cheese (softened)
  • 2 tablespoons unsalted butter (softened)
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and grease or line an 8×8-inch baking pan with parchment paper.
  2. Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. Mix Wet Ingredients: In a large bowl, beat the eggs, oil, sugars, and vanilla until well combined. Fold in the grated carrots and crushed pineapple. Stir in the dry ingredients until just combined. Add nuts and raisins if using.
  4. Bake: Pour the batter into the prepared pan and spread evenly. Bake for 25–30 minutes or until a toothpick inserted into the center comes out clean. Let cool completely before frosting.
  5. Make Frosting: Beat cream cheese and butter until smooth. Add powdered sugar and vanilla, mix until creamy. Spread evenly over the cooled bars. Chill before slicing for cleaner cuts.
