- 1/4 teaspoon black pepper
- Salt to taste
- Optional: red pepper flakes or hot sauce for heat
Instructions
- Saute Vegetables: In a large pot over medium heat, sauté the onion, garlic, carrots, celery, and bell pepper in a splash of broth or olive oil for about 5 minutes, until slightly softened.
- Add Ingredients: Add the chopped cabbage, diced tomatoes (with juice), remaining broth, water, basil, oregano, pepper, and salt. Stir well and bring to a boil.
- Simmer: Reduce the heat to low and let the soup simmer uncovered for 25–30 minutes, or until the vegetables are tender and the flavors are well combined.
- Adjust Seasoning and Serve: Taste and adjust seasoning. Add red pepper flakes or hot sauce if you like a kick. Serve warm.
