Ingredients

1 small head green cabbage, chopped;

1 green bell pepper, chopped;
1 red bell pepper, chopped;
1 can (14.5 ounces) diced tomatoes, undrained;

Seasonings:

6 cups low-sodium vegetable broth or chicken broth;
1 teaspoon salt;
1/2 teaspoon black pepper;
1 teaspoon dried basil;
1 teaspoon dried oregano;
1/2 teaspoon smoked paprika;
1/4 teaspoon crushed red pepper flakes (optional);
juice of 1/2 lemon;
fresh parsley for garnish.


Instructions

  1. Sauté Vegetables: In a large stockpot over medium heat, sauté onion, garlic, carrots, celery, and bell peppers for 5–6 minutes until slightly softened.
  2. Cook Soup: Add chopped cabbage, diced tomatoes, broth, salt, pepper, basil, oregano, smoked paprika, and red pepper flakes if using. Bring to a boil, then reduce heat and simmer for 20–25 minutes until vegetables are tender.
  3. Finish and Serve: Stir in lemon juice just before serving. Garnish with fresh parsley.
