- Pinch of cayenne pepper (optional)

Instructions
- Prepare Lobster Tails: Using kitchen shears, carefully cut the top shell of each lobster tail down the center to expose the meat. Gently loosen the meat from the shell, keeping it attached at the base, and lift it to rest on top for presentation.
- Make Butter Sauce: In a medium saucepan, add 2 tablespoons of water and bring to a low simmer over medium-low heat. Begin adding the butter one piece at a time, whisking continuously to create an emulsified sauce. Do not let it boil.
- Season Sauce: Once all the butter is added and melted, stir in the smashed garlic, lemon juice, salt, and cayenne pepper if using. Reduce heat to low to keep the sauce warm without separating.
- Poach Lobster: Add the lobster tails to the pan, placing them meat side down. Poach gently for 5–7 minutes, spooning the butter over the top occasionally, until the lobster meat is opaque and tender.
