Description

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 pound lean ground beef or ground turkey
  • 1 (15-ounce) can diced tomatoes, with juice
  • 1 (15-ounce) can tomato sauce
  • 4 cups beef or vegetable broth
  • 1 (15-ounce) can mixed vegetables, drained
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1 cup small pasta, like elbow macaroni or ditalini
  • Optional: chopped parsley for garnish

Instructions

  1. Heat olive oil and sauté vegetables: Heat olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery, and sauté until softened.
  2. Cook the ground meat: Add the ground beef or turkey to the pot and cook until browned. Drain any excess fat.
  3. Add remaining ingredients: Stir in diced tomatoes, tomato sauce, broth, mixed vegetables, Italian seasoning, salt, and pepper. Bring to a boil, then simmer.
  4. Cook pasta: Add pasta and cook uncovered until tender, about 10-12 minutes.
  5. Adjust and serve: Adjust seasoning as needed. Serve hot, garnished with parsley if desired.
