- 1 small onion, chopped
- 2 cloves garlic, minced
- 3 medium carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 pound lean ground beef or ground turkey
- 1 (15-ounce) can diced tomatoes, with juice
- 1 (15-ounce) can tomato sauce
- 4 cups beef or vegetable broth
- 1 (15-ounce) can mixed vegetables, drained
- 1/2 teaspoon Italian seasoning
- Salt and pepper, to taste
- 1 cup small pasta, like elbow macaroni or ditalini
- Optional: chopped parsley for garnish
Instructions
- Heat olive oil and sauté vegetables: Heat olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery, and sauté until softened.
- Cook the ground meat: Add the ground beef or turkey to the pot and cook until browned. Drain any excess fat.
- Add remaining ingredients: Stir in diced tomatoes, tomato sauce, broth, mixed vegetables, Italian seasoning, salt, and pepper. Bring to a boil, then simmer.
- Cook pasta: Add pasta and cook uncovered until tender, about 10-12 minutes.
- Adjust and serve: Adjust seasoning as needed. Serve hot, garnished with parsley if desired.
