Description

This Brown Sugar Peach Cake is a delightful dessert combining the sweetness of brown sugar frosting with the fresh, juicy flavor of peaches baked into a moist yellow cake. Featuring a luscious homemade brown sugar frosting made with butter, heavy cream, and vanilla, it’s perfect for summer gatherings or any time you crave a sweet, fruity treat.

Ingredients

Scale

Cake

  • 15 ounce yellow cake mix (such as Duncan Hines)
  • 3 large eggs
  • 1/3 cup vegetable oil
  • 1/2 cup peach nectar or peach juice
  • 1 lb peeled and chopped peaches (about 34 peaches)
  • Drop of orange food coloring (optional)

Brown Sugar Frosting

  • 1/2 cup unsalted butter, cut in pieces
  • 1/2 cup heavy cream
  • 1 cup packed brown sugar
  • 1 tsp vanilla extract
  • 2 1/2 cups confectioner’s sugar, sifted

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cake.
  2. Prepare Cake Batter: In a mixing bowl, blend together the yellow cake mix, eggs, vegetable oil, peach nectar or juice, and optional orange food coloring until well combined. Gently fold in the peeled and chopped peaches to maintain their texture.
  3. Bake the Cake: Pour the batter into a greased 9×12-inch baking pan. Bake for about 28 minutes or until a toothpick inserted in the center comes out clean with moist crumbs.
  4. Make Brown Sugar Frosting: While the cake bakes, combine the unsalted butter, heavy cream, and packed brown sugar in a saucepan. Heat the mixture over medium heat, stirring constantly, until it comes to a boil. Remove from heat and stir in the vanilla extract and sifted confectioner’s sugar. Whisk the frosting until smooth and free of lumps. Reheat gently if needed to maintain pourable consistency.
  5. Frost the Cake: Once the cake has finished baking and slightly cooled, pour the warm brown sugar frosting evenly over the top, ensuring full coverage.
  6. Set and Serve: Allow the frosting to set at room temperature or place the cake in the refrigerator to firm up the frosting before slicing and serving.

Notes

  • Fresh peaches provide the best flavor, but canned peaches can be used if fresh are unavailable.
  • The orange food coloring is optional and can enhance the visual appeal of the batter and cake.
  • If reheating the frosting, do so gently over low heat to prevent burning.
  • Ensure the cake is slightly cooled before adding the frosting to avoid melting it too much.
  • Store leftovers covered in the refrigerator; best consumed within 3 days.
