  • 1 cup whole milk

  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon nutmeg

Instructions

  1. In a large pot, heat the butter and olive oil. Add onion, carrots, and celery; sauté until softened. Stir in garlic and cook for 1 minute. Sprinkle in flour and stir continuously to form a roux.
  2. Gradually whisk in chicken broth, milk, and cream until smooth. Add shredded chicken, gnocchi, thyme, nutmeg, salt, and pepper. Bring to a gentle boil, then simmer for 10–12 minutes.
  3. Stir in chopped spinach and cook until wilted. Adjust seasoning as needed. Serve hot.
