Ingredients
Scale
Berry Filling:
- 4 cups mixed berries (such as blueberries, raspberries, blackberries, and sliced strawberries)
- 3/4 cup granulated sugar (divided)
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
Biscuit Topping:
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 6 tablespoons cold unsalted butter (cubed)
- 1/2 cup milk
- 1 teaspoon vanilla extract
- Optional: coarse sugar for topping
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Prepare the berry filling: In a mixing bowl, combine the berries, 1/2 cup of sugar, lemon juice, and cornstarch. Toss gently to coat, then pour the berry mixture into a greased 8×8-inch baking dish.
- Make the biscuit topping: In another bowl, whisk together the flour, remaining 1/4 cup sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the milk and vanilla just until a soft dough forms.
- Assemble and bake: Drop spoonfuls of the dough over the berry mixture, leaving gaps to allow steam to escape. Sprinkle with coarse sugar if desired. Bake for 35–40 minutes, or until the topping is golden brown and the berries are bubbling. Let cool slightly before serving.
Notes
- You can use fresh or frozen berries—no need to thaw if using frozen.
- Serve warm with whipped cream or vanilla ice cream for a classic touch.
