Description

A hearty and delicious Beefy Meatball Sub Delight featuring juicy homemade beef meatballs simmered in rich marinara sauce, topped with melted mozzarella cheese, and served in soft sub rolls. This classic American-Italian sandwich recipe is perfect for a satisfying lunch or dinner.

Ingredients

Scale

For the Meatballs

  • 1 1/2 pounds ground beef
  • 1/3 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped (or 1 teaspoon dried parsley)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For Cooking and Assembly

  • 1 tablespoon olive oil (for browning meatballs)
  • 2 cups marinara sauce
  • 4 sub rolls or hoagie buns
  • 1 1/2 cups shredded mozzarella cheese

Instructions

  1. Make the Meatball Mixture: In a large bowl, combine ground beef, breadcrumbs, grated Parmesan, egg, minced garlic, chopped parsley, Italian seasoning, salt, and black pepper. Mix gently until just combined to avoid tough meatballs. Shape the mixture into 1 1/2-inch meatballs, making about 16 to 18 pieces.
  2. Brown the Meatballs: Heat olive oil in a large skillet over medium heat. Add the meatballs and cook, turning occasionally, until browned on all sides, approximately 6 to 8 minutes total.
  3. Simmer in Sauce: Pour the marinara sauce over the browned meatballs in the skillet. Reduce the heat to low, cover, and let simmer for 15 to 20 minutes until meatballs are cooked through and tender.
  4. Prepare Sub Rolls: Preheat the oven to 375°F (190°C). Slice the sub rolls lengthwise but do not cut all the way through, creating a hinge. Place the rolls on a baking sheet.
  5. Assemble the Subs: Spoon 4 to 5 meatballs and some marinara sauce into each sub roll. Generously top with shredded mozzarella cheese.
  6. Bake and Melt Cheese: Bake the assembled subs in the preheated oven for 8 to 10 minutes until the cheese is melted and bubbly. Optionally, broil for 1 to 2 minutes to lightly brown the cheese.
  7. Serve: Serve the meatball subs hot, optionally with a side of chips, salad, or fries for a complete meal.

Notes

  • For extra juicy meatballs, use a mix of ground beef and ground pork.
  • Add red pepper flakes to the marinara sauce for a spicy kick.
  • Toast the sub rolls lightly before filling for a crispier sandwich texture.
