Chicken Skewers
- 1½ pounds boneless, skinless chicken breasts or thighs, cut into bite-sized cubes
- 1 tablespoon olive oil

- 8–10 wooden or metal skewers
Bang Bang Sauce
- ½ cup mayonnaise
- ¼ cup sweet chili sauce
- 1 tablespoon sriracha (adjust to taste)
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1 teaspoon garlic powder
Instructions
- Prepare Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.
- Make Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, lime juice, and garlic powder until smooth. Set the sauce aside for later use.
- Season Chicken: In a large bowl, toss the bite-sized chicken pieces with olive oil, salt, and black pepper until evenly coated.
- Thread Chicken: Evenly thread the seasoned chicken pieces onto the soaked wooden or metal skewers.
- Preheat Grill: Heat a grill or grill pan over medium-high heat, ensuring it’s hot before placing the skewers.
- Grill Chicken: Place the skewers on the grill and cook for 10–12 minutes, turning occasionally to get a nice char. Grill until the chicken reaches an internal temperature of 165°F and is cooked through.
- Apply Sauce: During the last few minutes of grilling, brush some Bang Bang sauce onto the chicken skewers for extra flavor and glaze.
- Serve: Remove the skewers from the grill. Drizzle or brush additional Bang Bang sauce onto the skewers before serving. Serve hot with extra sauce on the side for dipping.
