- 2 large eggs
- 1 tsp vanilla extract
For the streusel topping:
- 1/2 cup all-purpose flour
- 1/3 cup brown sugar
- 1 tsp cinnamon
- 1/4 cup unsalted butter (cold, cubed)
For the glaze (optional):
- 1/2 cup powdered sugar
- 1–2 tsp milk or cream
Instructions
- Preheat oven and prepare muffin tin: Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with liners.
- Prepare muffin batter: In a large bowl, whisk together dry ingredients. In a separate bowl, mix wet ingredients until smooth. Combine wet and dry ingredients, then fill muffin cups with batter.
- Add streusel topping: Mix streusel ingredients until crumbly and sprinkle over muffin batter.
- Bake: Bake for 18–22 minutes until a toothpick inserted in the center comes out clean. Cool in pan before transferring to a wire rack.
- Add glaze (optional): Whisk powdered sugar with milk and drizzle over cooled muffins.

- These muffins freeze well—just skip the glaze until ready to serve.
- For extra texture, add chopped walnuts or pecans to the streusel.
- Greek yogurt can be used in place of sour cream.
