- 1/4 cup maple syrup or honey
- 1 large egg
- 2 tablespoons melted coconut oil or butter
- 1 teaspoon vanilla extract
Add-Ins:
- 1 cup fresh or frozen blueberries
- 1/3 cup sliced almonds
- Additional blueberries and almonds for topping (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F and lightly grease an 8×8-inch baking dish.
- Mix dry ingredients: In a large bowl, combine oats, baking powder, cinnamon, and salt.
- Prepare wet ingredients: In another bowl, whisk together milk, maple syrup, egg, melted coconut oil, and vanilla.
- Combine: Pour wet ingredients into the dry mixture, stir to combine. Fold in blueberries and almonds.
- Bake: Pour mixture into the baking dish, spread evenly. Top with extra blueberries and almonds. Bake for 35–40 minutes until set and golden on top.
- Cool and serve: Let it cool slightly before serving.
