  • 23 large eggs, beaten
  • 1 1/4 cups panko bread crumbs
  • 1 teaspoon seasoning salt

Instructions

  1. Preheat and Prep: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and place a baking rack on top, if available. Spray the rack or baking sheet lightly with cooking spray to prevent sticking.
  2. Prepare Fish: Cut the white fish fillets into equal-sized sticks. Season both sides of the fish sticks with kosher salt and ground black pepper to taste.
  3. Bread Fish: Set up a breading station by placing the flour in one shallow bowl, the beaten eggs in another, and the panko bread crumbs mixed with seasoning salt in a third bowl.
